Quick and easy: Tri Color Pepper Cold Soup/Veggie Smoothie

Quick and easy way to add some antioxidants to your busy work day. 

Prep/cook time: 10 min

Ingredients:

  • 1/2 medium red pepper chopped
  • 1/2 medium orange pepper chopped
  • 1/2 medium yellow pepper chopped
  • 2 Tablespoons (T) Trader Joe’s Organic Sriracha Dressing

Put all ingredients in blender or magic bullet and blend for 30 seconds or until desired consistency. Wallah!! Drink this fabulous vegetable blend on the go or pair with some Tortilla chips. Another option,  pour it over tacos and burritos for an antioxidant punch! Very easy way to transform your ordinary meal into a power meal. All under 150 kcal and less than 10 min cook/prep time.
